Guanosine 5'-Monophosphate Disodium Salt Hydrate (5'-GMP-Na2) (CAS: 5550-12-9) Functions Guanosine 5'-Monophosphate Disodium Salt Hydrate (5'-GMP-Na2) is a flavor enhancer which is a white crystals or crystalline powder, and has characteristic taste. It is soluble in water, sparingly soluble in alcohol, and practically insoluble in ether. It is obtained by chemical synthesis. Guanosine 5'-Monophosphate Disodium Salt Hydrate is allowed flavoring agent allowed at home and abroad, often used together with MSG and sodium inosinate. When mixed for usage, it has multiplication effect on the taste. It can be used for all types of food and should be subject to appropriate use according to production needs. 5'-GMP-Na2 is mainly used as condiments, being a new generation food by freshener. 5'-GMP-Na2 is a kind of flavor agent with mushrooms flavor. It is often used in conjunction with sodium glutamate (adding amount is 1%~5%), there is a very significant increase in freshener effect. Applications 1. 5'-GMP-Na2 is combined with sodium glutamate or 5'-inosinate disodium, which has a remarkable synergistic effect and greatly increases the umami taste. 2. 5'-GMP-Na2 can be decomposed by phosphatase to lose its taste, so it should not be used in fresh food. This can be used by heating the food to about 85 to passivate the enzyme. 3. 5'-GMP-Na2 is rarely used alone, and can be used in combination with sodium glutamate (MSG). When used in combination, the dosage is about 1% to 5% of the total amount of MSG; soy sauce, vinegar, meat, fish products, instant soup powder, instant noodles and canned foods can be added, and the dosage is about 0.01~0.10g/kg. It may also be mixed with lysine hydrochloride or the like and added to cooked rice, instant noodles, and snacks at a dosage of about 0.5 g/kg. (0.01mg/ml) Arsenic (As2O3): 1.0g, (5), ref: 2.0ml of As2O3 Std. Other Related Compounds of Nucleic Acid: Test Sample: 5μg, Q-II-b Loss on Drying: at 120℃ for 4 hours Assay: Dried sample, 500mg, 0.1mol/L HCL, at 256nm Spectral Ratios: 250/260nm: 0.95 to 1.03, 280/260nm: 0.63 to 0.71. Spectral Ratios: Take 20mg of Disodium Guanosine 5'-Monophosphate and add hydrochloric acid (1→100) to make 1000ml of a test solution. Measure the absorbance of this solution at the wavelength of 250nm (A1), 260nm (A2), 280nm (A3). The ratios, A1/A2 and A3/A2 are 0.95 to 1.03, and 0.63 to 0.71, respectively. Recommended storage limit and condition: Preseved tight containers at controlled room temperature (2 years).
